Cheesy Artichoke Squares

Artichoke Squares (from Cindy Littleton)


12           oz.   marinated artichoke hearts
   1/2       cup   onion chopped fine
 1           clove garlic minced
(or 1/4      tsp.  garlic powder -alt)
 4                 eggs
   1/4       tsp.  salt
   1/4       tsp.  pepper
   1/4       tsp.  oregano
 2           tbsp. parsley flakes
 2           cups  shredded cheddar cheese
   1/4       cup   Italian-style dried breadcrumbs
   1/4 - 1/2 tsp.  Tabasco sauce


  • Drain marinade from artichoke hearts into small frying pan.
  • Saute onion and garlic in marinade until almost all liquid is gone (about 5 minutes).
  • Cool.
  • Chop artichoke hearts.
  • In large bowl beat eggs.
  • Add all other ingredients and mix well.
  • Spread in 7 X 11 inch pan sprayed with PAM.
  • Bake at 325° for 30 minutes.
  • Cool on rack.
  • Cut into squares.


Can freeze cooked squares.

Reheat frozen on cookie sheet for 10 minutes at 350°.
